It may seem a bit exaggerated, but it is not! Our Sustainability Department worked on the development of a circular system within the Vendimia, which achieved for the second consecutive year, reuse all organic waste, thanks to our composting system.
This compost project, which began in 2019, receives all the organic material that results from the winemaking process , in addition to incorporate organic waste from our offices throughout the year.
To achieve her goal, Margaret Dowley, Sustainability Manager at Viña Cousiño Macul, says that prior to the Harvest, work was done to improve the Compost Zone to receive this year's material. " We started our hills with the first waste of stalks and grape pomace, which we mixed with manure from a neighboring stable. We measured them weekly and, surprisingly, due to the decomposition process, they reached temperatures close to 60°C!”
The compost process It is a fundamental practice in field management to incorporate regenerative agronomy practices , since this preparation It is used as fertilizer for the vines after the grape harvest , after the plant has spent a lot of energy and nutrients to produce the grapes and needs to regain its strength. “ We use all our waste, nothing leaves our system. Last year we started with 800 kilograms of raw materials and this year we expect a larger number.”
Composting, recycling, planting covered crops and beekeeping are just some of the projects that the Cousiño Macul Sustainability Team is developing, and which they hope to perfect and enhance in the face of the challenging year 2020 that lies ahead.
